Carrageenan is extracted from red seaweed, most commonly of the Chondrus crispus, Eucheuma cottonii, Eucheuma spinosum, or Gigartina stellata species. Carrageenan is available in three grades: iota, kappa, and lambda.  It is used in foods products primarily as a thickener and emulsifier.
