Gellan Gum is a water soluble polysaccharide produced by the bacterium sphingomonas elodea.
It is used in the food manufacturing sector for thickening, emulsifying and stabilising. It produces strong, clear gels and is an excellent suspending agent even at low concentration. It can be used as an alternative to gelatin in the production of vegan gummie sweets.
Gellan gum is also used in the rapidly growing plant based milk sector to keep plant proteins suspended in the milk.
We supply gellan gum in its two most common grades – high acyl and low acyl.
