Tara Gum

Tara Bean Gum is the milled endosperm of the seeds of the of the Tara tree (Cesalpinia siliqua) which is native mainly to the Peruvian Andes.  It is a galactomannan polysaccharide and has properties similar to both guar gum and locust bean gum and can often be used as a substitute for the latter.  It swells in hot or cold water and gives viscous solutions.
