Locust Bean Gum or Carob Gum is the milled endosperm of the seeds of the of the Carob tree (Ceratonia siliqua Leguminosae) which grows around the Mediterranean. It is a galactomannan polysaccharide and has limited solubility in cold water but hydrates on heating. It is a an effective gum for water binding and thickening and gives a smooth, non-slimy texture to food products. Locust Bean gum also demonstrates synergistic effects with several gums and gelling agents.
