Cellulose – Methyl Cellulose

Methyl Cellulose is produced from plant material cellulose to produce a white powder which is used as a thickener and emulsifier in food products.

It is useful in gelling hot, cooked products because it is soluble in cold water but once a higher temperature is reached the product is not soluble and it precipitates, leading to a gel.

Methyl Cellulose is one ingredient of HydroTOP HighGEL (a stabilising and texturising system developed by our partner Hydrosol) which can be used in meat and vegetarian/vegan products.  It gives gelation on cooking, resulting in  a firm bite and sliceability if required.  It brings textural benefits to the eating qualities of these products particularly vegetable based formulations.
